Recipe | Brunch Pancakes

These pancakes of course aren't limited to brunch, but who doesn't love a pancake based brunch? In fact who doesn't love brunch? Be it a weekday or the weekend, brunch is my favourite meal and more often than not, pancakes are a go to of mine. These American style fluffy pancakes are delicious, easy to make and the batter lasts for a couple of days in the fridge so you can have pancake mix at the ready!





 Ingredients:

  • 135g plain flour 
  • 1 tsp baking powder 
  • 1/2 tsp salt 
  • 2 tbsp caster sugar 
  • 130ml milk 
  • 1 egg 
  • 2 tbsp melted butter or olive oil (both work equally well) + extra for frying 
  • toppings of your choice, I went for raspberries, strawberries and Nutella

First of all add all of your dry ingredients into a big bowl, and then in a jug beat together the egg and the milk before whisking in the butter or oil. Once that's done add the milky mixture to the bowl of flour, baking powder, salt and caster sugar and mix together until you have a smooth batter. To cook, simply heat a pan on the hob, about medium heat, add some oil to the pan and then add the mixture. Cook on both sides until a lovely tingled goldeny brown colour, serve and top with whatever you like. I love having chocolate and berries with mine, but go for whatever takes your fancy. And there you have it, delicious pancakes perfect for an at home brunch.
