Recipe | 'Healthy' Banana Pancakes

When I say healthy pancakes, I'm not claiming that eating these every day will be a healthy diet, I simply mean that besides any toppings this recipe contains no added fats or sugars. And let's be honest here, who doesn't love pancakes?! Because of the sweetness in banana, these aren't savoury pancakes, however they make for a delicious treat brunch or dessert, and they're so simple to make.



For one serving (3 pancakes) you'll need:

1 ripe banana
1 medium egg
2 tablespoons of self-raising flour
Any toppings you like - Nutella, fresh fruit, dried fruit, maple syrup, honey etc.
A little oil for frying, coconut oil works really well for this - I used a single spray of Fry Light 1Cal


 Mash the banana in a bowl and when there are no large lumps or chunks add the egg and mix together. Add the flour and mix until the egg, banana and flour have all combined together. When your pan is hot, add some of the mixture and fry for a couple of minutes on each side - until golden brown. All that's left is plate up and top with whatever you like. I went for a mixture of dried berries - cherries, blueberries and cranberries, with a drizzle of honey.

And there you have it; delicious, healthy pancakes!
