Ultimate Vegan Chocolate Chunk Cookies

Crisp on the outside, soft and chewy on the inside with melty chunks of chocolate - the perfect cookie, and they're vegan too, making it the perfect recipe to round off Veganuary with.
This recipe is ultra simple, so ideal for whipping up as a treat for a cosy evening in with friends.

Ingredients for 12 cookies:

  • 100g vegan butter - I use Pure Sunflower 
  • 100g sugar 
  • 2 tbsp plant milk - I use Alpro coconut almond
  • 2 tsp vanilla extract 
  • 200g self raising flour 
  • 60g vegan chocolate chunks
Simply cream the butter and sugar together, before beating in the milk and vanilla. Once that is combined, stir in the flour until a dough is formed. Fold in the chocolate to the dough, before spooning onto a lined baking tray. The cookies take around 15-20 mins in the oven at 180 degrees - this partially depends on your oven and whether you prefer a chunkier cookie like I've made, or use less mixture per cookie for a thinner result. Let them cool for bit before lifting off the tray and enjoying.
