Christmassy Cinnamon Cookies | Blogmas

These are only Christmassy because cinnamon always makes me think of Christmas for whatever reason, but of course these are delicious all year round - who doesn't love cookies?! They're handy for having in a tin for unexpected visitors over Christmas, especially as they're vegan if you use dairy free 'butter' and can be made gluten free easily so lots of allergens are covered for. The recipe is really easy and quick, so perfect for when you're busy leading up to Christmas but still want to make some sweet treats.





Ingredients: 


  • 200g butter - I used Vitalite which is dairy free
  • 200g sugar - granulated or caster 
  • 2 tablespoons of golden syrup 
  • 300g plain flour 
  • 3-4 teaspoons of cinnamon 
  • 1 teaspoon of bicarbonate of soda 

First take the butter and sugar in a bowl and cream them together, before adding all of the other ingredients and mixing well. The mix can look a little dry but don't worry this tends to happen.



Roll pieces of the dough into little balls and place on a baking tray before pressing down to flatten slightly and sprinkling them with a touch more sugar and cinnamon. Cook them in an oven pre-heated to 200 degrees centigrade for around 10 minutes, but keep an eye on them so they don't burn! Leave them to cool slightly before lifting them onto a cooling rack. And there you have it; deliciously cinnamony cookies perfect for the Christmas season!
