Banana and Chocolate Chunk Loaf

Few things are better than a cup of tea with a piece of warm banana bread studded with melty chunks of chocolate.
This recipe is really easy, uses up any leftover bananas at the bottom of the fruit bowl, is seriously delicious, and completely dairy free!

Ingredients:

  • 3 mashed bananas
  • 1 medium egg
  • 4oz dairy free spread
  • 6oz caster sugar
  • 8oz self raising flour 
  • 1 tsp baking powder 
  • 3 tbsps dairy free milk
  • half a large dairy free chocolate bar chopped into chunks

1. Add the bananas, egg, dairy free spread, sugar, flour, baking powder and milk and beat it all together until you have a smooth cake mixture
2. Fold in the chopped chocolate
3. Pour the mix into a greased and lined 2lb loaf tin, and bake in an oven preheated at 180 degrees for around 1 hour and 30 mins. I usually pop some tinfoil on half way through, and use a skewer to check it's cooked all the way through regularly in the last 40 mins of cooking

Don't have a loaf tin? This recipe also makes 12 cupcakes, simply divide the mixture into cases and bake at 180 for 25-30 mins.
